This Greek Style Vegetable Stir Fry recipe is super quick and easy, and full of flavor!
I came up with this one based on what was in the fridge, and it's extremely tasty. Definitely one I'll be recreating! I loved it!
- Olive oil for the pan
- 1 teaspoon finely minced garlic
- 1/3 cup finely chopped, roasted red pepper
- 1 1/2 cups cooked brown rice
- 5 cups super firmly packed spinach leaves
- 3/4 cup Kalamata olives
- 1/2 crumbled feta cheese
- Salt and pepper to taste
Total Prep and Cooking Time: 15 minutes
Coat a large saute pan with olive oil and place over medium heat. Add the garlic, the red pepper, and rice. Stir to combine and add the spinach leaves (it will seem like way too much for the pan, but within a minute it will wilt to at least half the volume). Add the olives and cheese and season to taste with salt and pepper. Yum!
