A frozen dessert is the perfect refreshing end to a summer meal. I love ice cream and popsicles, but pies are my favorite, and frozen pies are simply decadent. This no-bake Lemonade Icebox Pie is perfect to serve on summer evenings after dinner, at a BBQ, or to wind down a patio party. It’s really quite simple to pull together and is always a huge hit; kids and adults love the bright lemony flavors.

total time: 6 hours and 10 minutes
- 8 ounces low-fat cream cheese, softened
- 1 cup lemonade concentrate, thawed
- 1 can sweetened condensed milk
- 2 cups freshly whipped cream
- 1 graham cracker crust
Step 1: In an electric mixer beat the cream cheese, lemonade concentrate, and condensed milk until smooth and creamy. Then, fold in the whipped cream using a spatula until just combined.
Step 2: Carefully spread the mixture into the prepared graham crust and smooth the top with a spatula. Place the pie in the freezer for six hours to freeze completely. Slice and serve!
As you’ll see by the photos, the pie is pretty light, but you can add yellow or pink food coloring if you would like it to be a brighter summery color.
Garnish with lemon slices if desired.
