Peanut Butter Heart Sandwich Cookies
These sandwich cookies will fill your loved ones' hearts & tummies.
- unsalted butter: 2 sticks + 4 tablespoons, softened
- creamy peanut butter: 2/3 cup + 2/3 cup
- light brown sugar: 2/3 cup
- vanilla: 2 teaspoons
- all-purpose flour: 2½ cups
- kosher salt: 1 teaspoon + 1 pinch
- confectioners' sugar: ½ cup
Step 1: In a mixing bowl cream the peanut butter, sugar, and vanilla until smooth. Then fold in the flour and salt until just combined and smooth. Wrap the dough in plastic and chill for 1 hour.
Step 2: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
Step 3: Roll out the chilled dough to 1/4-inch thickness on a lightly floured surface. Dip a 2-inch round or heart-shaped cookie cutter in flour and cut out the shapes. Re-roll the scraps to use up all the dough.
Step 4: Line them up on the lined baking sheets and bake for 15 to 18 minutes, or until lightly browned around the edges. Allow them to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Step 5: Make the filling. Cream the butter, peanut butter, confectioners' sugar, and salt until soft and fluffy. Make sandwich cookies with a generous amount of filling in between.
Makes about 18-20 cookies depending on the size cookie cutter you use.
