Shaved Asparagus Salad with Peas and Mint Recipe
An elegant, crisp, and refreshing summer salad to add to your rotation!
- asparagus: 12 spears
- peas (fresh, or frozen and thawed): ¼ cup
- mint leaves: ¼ cup
- olive oil: 4 tablespoon
- lemon, juiced: ½ lemon
- pecorino cheese, finely grated: 3 tablespoons
- salt + pepper: to taste
Step 1: Using a vegetable peeler, shred the asparagus spears into ribbons. Half the spears lengthwise.
Step 2: In a medium-sized bowl toss the shredded asparagus with the peas and mint leaves.
Step 3: In a small bowl whisk the olive oil, lemon juice, and grated cheese together to make a vinaigrette.
Step 4: Toss the vinaigrette with the asparagus. Season to taste with salt + pepper. Garnish with shaved pecorino (optional).
