Apple-Honey Cakes Recipe
Welcome the Jewish New Year with these super-succulent apple cakes!
- 1 apple: diced into 1/4 inch cubes
- whole wheat flour (or all purpose): 2 cups
- baking soda: 1 teaspoon
- ground cinnamon: 1 teaspoon
- ground all-spice: 1/2 teaspoon
- ground nutmeg: 1/4 teaspoon
- salt: 1/2 teaspoon
- eggs (large): 2
- all-natural apple sauce: 1 cup
- neutral oil: 3/4 cup
Step 1: Preheat oven to 400 degrees and lightly grease muffin trays.
Step 2: Wash and cut the apple into 1/4 inch-sized cubes.
Step 3: In a large bowl whisk the flour, baking powder, salt, cinnamon, all-spice and nutmeg together.
Step 4: In to the same bowl add the eggs, apple sauce, and oil. Whisk until lump-free. Fold in the apple chunks.
Step 5: Using a ladle, scoop the batter into the prepared muffin trays, making sure only to fill half way up. Bake for 20-25 minutes, or until golden brown.
