I’m a huge fan of getting breakfast ready the night before. In my house, this doesn’t mean chopping up a billion things and making a hollandaise sauce that takes eight hours to perfect. For me, it means soaking my oats so they cook quicker (and digest better, too) in the very saucepan I’ll cook them in the next morning. The oats can then make a chia pudding that forms the base of my beautiful Berry Parfait recipe, a real winner. It looks like you’ve spent hours making it when, really, all the hard work is done while you sleep. A perfect Christmas morning breakfast for the family perhaps?
Overnight breakfast: Berry parfait
This breakfast looks like you’ve spent hours making it when, really, all the hard work was done while you slept.
- milk: 1 cup
- chai seeds: 3 tablespoons
- vanilla bean powder: ½ teaspoon
- yoghurt: 1 cup
- nuts, seeds or coconut (to sprinkle): 1 cup
- fresh berries: 1 cup
- maple syrup (optional): 4 tablespoons
Step 1: The night before you’d like to serve the parfait, combine the milk (I use coconut milk as I love the naturally sweet taste of it) with the chia seeds and vanilla bean powder. Stir until really well combined and place in the fridge to set; it will thicken to a pudding consistency.
Step 2: When you’re ready to serve, gather four small glasses and start layering the parfaits with the chia pudding and remaining ingredients. I like to start with the nut mixture but there are no rules when it comes to making a parfait -- so have some fun, baby.
Step 3: Once all the ingredients are used up and the glasses are stacked full you’re ready to enjoy. If you like things sweet, drizzle a generous tablespoon of maple syrup over the top before you dive in.
Tip: I often make these parfaits for breakfast and store any leftovers my babes don’t eat in the fridge for the next morning’s smoothie. I whack it in there so there’s no waste. This parfait is packed with protein, thanks to the chia seeds, yoghurt and nuts. It will keep you satisfied for hours, so maybe you won't need that mid-morning snack after all.
