One Skillet Chicken, Broccoli and Cheese Recipe
Nothing better than a fast dish -- with minimal clean-up.
- 2 tbsp olive oil
- 1 yellow onion, dice
- 1 carrot, peeled and diced
- salt and pepper, to taste
- 1 lb boneless chicken, cut into 1-inch pieces
- 1 16-oz bag frozen broccoli florets
- 2 cups shredded cheddar cheese
Step 1: In a large nonstick skillet, heat the olive oil over medium heat. Add the onions and carrots and season with salt and pepper. Cook until softened, stirring occasionally, about 5 to 7 minutes. Add the chicken to the skillet and season with salt and pepper. Cook until opaque on all sides -- don't worry that it's not cooked through yet. It will be!
Step 2: Add the frozen broccoli to the skillet and season with salt and pepper. Cover and cook for 10 minutes.
Step 3: Stir cheese into the skillet. Remove from heat. Taste and adjust seasoning as desired.
