Apple Pie French Toast Casserole Couldn’t Be Any Easier to Make

    I’m a hot and hearty breakfast person. And there is nothing my family loves more in the cold months than an overnight French toast casserole. Our new favorite breakfast as of late is an apple pie French toast casserole.  It is incredibly simple and it tastes like Fall on a plate. It’s ideal for weekend mornings, too. I love that you can prep it the night before, sleep in, and then cook it whenever you’re ready to eat. It’s the perfect breakfast or brunch to make for guests, and we just can’t get enough of it.

    The key to this french toast casserole is letting it soak overnight. That way the bread is able to absorb all the custard. As it bakes the custardy bread lifts the apples and absorbs all of the warm spices.There is also a little crisp on top because that’s what I like to put on my apple pies, so why not add it to the custard as well?

    Ingredients:

    • brioche or challah: 1 loaf, cut into 1-inch cubes
    • large eggs: 6
    • whole milk: 3 cups
    • granulated sugar: 1/4 cup
    • vanilla extract: 1 Tablespoon
    • ground cinnamon: 1 teaspoon
    • apple pie filling: 1 (21-ounce) can
    • For the topping:
    • quick cooking oats: 1/2 cup
    • all-purpose flour: 1/4 cup
    • dark brown sugar: 2 Tablespoons
    • kosher salt: 1 teaspoon
    • ground cinnamon: 1/2 teaspoon
    • butter: 3 Tablespoons, softened

    Directions:

    Step 1: Butter a 9x13 baking dish. Add the cubed bread to it and spread it around evenly.

    Step 2: In a large mixing bowl whisk the eggs, milk, sugar, vanilla, and spices and pour the mixture over the cubed bread, spreading it evenly around and pressing the bread down so it absorbs the milk.

    Step 3: Pour the apple pie filling over the bread and spread it evenly over the top.

    Step 4: To make the topping: in the medium bowl pinch all the ingredients together with your fingers until blended and scatter over the top of the apples.

    Step 5: Cover the baking dish with plastic wrap and let it soak for at least 2 hours or up to overnight.

    Step 6: Preheat the oven to 350 degrees F. Bake the casserole for about 45 minutes, or until the top and sides are warm and bubbly.

    Step 7: Allow to cool until comfortable to touch, then serve slices drizzled with fresh maple syrup.
