I grew up eating traditional meat and potato meals with my family. And while I still love those dishes, I want to satisfy my cravings in a healthier way. After experimenting in the kitchen, I was so surprised by how delicious mashed cauliflower could taste.
The veggie’s color and texture mimic butter- and cream-filled potatoes—but with much less fat and far fewer calories. The best part? The dish is so easy to make that it has become a home-cooked favorite for my holiday dinners (and the rest of the year, too). It’s a hit with everyone. Even babies and toddlers love it!

'Skinny' Cauliflower Mash Recipe
After experimenting in the kitchen, I was so surprised by how delicious mashed cauliflower could taste.

Cauliflower: 1 head, chopped into florets.
Garlic: 3-5 cloves roasted*
Himalayan salt: to taste
Freshly ground pepper: to taste
Step 1. Steam cauliflower for 5 to 10 minutes or until tender.
Step 2. Transfer to a food processor or a blender and pulse for 10 seconds. Add remaining ingredients and pulse until well blended.
For a Creamier Mash:
Add 1 to 2 tablespoons of ghee (clarified butter). And for a bolder flavor, add half of a caramelized onion.
To Make Roasted Garlic:
You can sometimes find roasted garlic in the olive bar at your local grocery store. If you would rather make it at home, simply slice off the top of the garlic bulb. Drizzle with coconut oil or olive oil and sprinkle with salt and pepper. Place upright on a pan and bake in the oven for about 25 minutes at 375 degrees F. You’ll know it’s done when the garlic is soft and changes into a deeper and darker color. Squeeze out all of the cloves and add into your mash.
